Food begins to spoil most rapidly during the first two days after purchase.  Even though most restaurants have a very short holding period before their food is served to the customer, it is during the first two days that proteins and sugars, food sources for micro-organisms, are most prevalent.  For this reason bacteria and other micro-organisms are in greatest abundance early on and then begin to die off as their main food source is used up.  You can see this dramatically illustrated on the graphs of our “The Science” page under the section ”Food Safety Test”.  The highest rate of growth takes place by day 2.
